SALSA CHICKEN

(low maintenance-high taste)

YOU WILL NEED:
  • boneless chicken enough for your family (mine of 4 uses about 2 pounds with left overs)
  • 1 med sized (per 2 lbs of chicken) jar of your favorite salsa. (I use generally a chunky variety) Choose med or hot (hot if you don't have kids-kids do well with medium; it doesn't "burn")
  • 1 pound of your favorite cheese
  • a little bit of parmeasan cheese.
DIRECTIONS

Ok! Turn on your oven to 250/300 degrees. Break out a deep baking dish you can cover. This will cook untill done (I like mine to be able to be spoon cut) Now: Put in the rinsed chicken and cover liberally (all of it) with the salsa. Fill the salsa can up with water and add that as well. Cover and bake untill done (about 1 1/2-2 hours). Turn off oven-keeping the dish in it. Carefully lift up the lid and add pre-sliced cheese, close baking lid and set the table. Once on the plate, garnish with parmesan. Served best with some grain (rice or noodles) with the chicken placed on top of it and some select vegetable. Kids love it. Very taste and very easy. Not much to do and low cost. Mmmmm!
