Jayne's Lemon Squares (With Lemons Squeezed by Frank)
CRUST
INGREDIENTS
- 1/2 lb. (2 sticks) real butter (not that wimpy margarine stuff)
- 2 cups flour
- 1/2 cup confectioners sugar
DIRECTIONS
Mix crust ingredients by hand until crumbly. Pat gently into an ungreased
9 X 13 pan. Bake at 350 degrees for ten minutes. Reduce heat to 325
degrees and continue cooking for another ten minutes or so until top is a
pale golden color. (Hint: Watch carefully)
FILLING
INGREDIENTS
- 4 eggs lightly beaten
- 6 tbs. lemon juice (freshly squeezed by the dh or a pal is best but Frank says he still doesn't see any reason why you can't use the stuff out of those little squeeze bottles).
- 1 tsp. baking powder
- 1 tsp grated lemon peel
- 1 cup sugar (increase to 1 1/2 cups if you prefer a sweeter filling)
- 3 tbs. flour
DIRECTIONS
Mix all ingredients for filling with an electric mixer. Pour over lightly
baked crust. Bake for about 25 minutes or until very light brown and set.
(Watch carefully). Sprinkle with confectioners sugar. Cut into squares.
