KATIE'S CHUNKY PIZZA SOUP

Note: This recipe was given to me by one of the girls I looked after. It was her favourite and my kids like it too.
INGREDIENTS
  • 1 tbsp vegetable oil
  • 1 small onion - chopped
  • 1/2 cup sliced mushrooms
  • 1/4 cup slivered sweet green peppers
  • 1-28oz can plum tomatoes (not drained)
  • 1 cup beef stock
  • 1 cup thinly sliced pepperoni
  • 1/2 tsp dried basil
  • 1 cup shredded mozzarella cheese
DIRECTIONS

    In a saucepan, heat oil over medium heat, stir fry vegetables. Add tomatoes, stock, pepperoni and basil. Let simmer 15 minutes.

    Serve in bowls with cheese melted on top.
