KATIE'S CHUNKY PIZZA SOUP
Note: This recipe was given to me by one of the girls I
looked after. It
was her favourite and my kids like it too.
INGREDIENTS
- 1 tbsp vegetable oil
- 1 small onion - chopped
- 1/2 cup sliced mushrooms
- 1/4 cup slivered sweet green peppers
- 1-28oz can plum tomatoes (not drained)
- 1 cup beef stock
- 1 cup thinly sliced pepperoni
- 1/2 tsp dried basil
- 1 cup shredded mozzarella cheese
DIRECTIONS
In a saucepan, heat oil over medium heat, stir fry vegetables. Add tomatoes, stock, pepperoni and basil. Let simmer 15 minutes.
Serve in bowls with cheese melted on top.
