GRANOLA BARS

Note: This is a no-fail recipe, because most of the amounts are variable. If you don't like raisins, for example, substitute more chocolate chips. If you don't have sunflower seeds, substitute something else, or leave 'em out. This is great as a somewhat nutritious substitute for cookies, and it's one bowl fast!
INGREDIENTS
  • 1 cup firmly packed brown sugar
  • 2/3 cup peanut butter
  • 1/2 cup light corn syrup
  • 1/2 cup margarine or butter, melted
  • 2 teaspoons vanilla
  • 3 cups quick-cooking oats
  • 1/2 cup coconut
  • 1/2 cup sunflower nuts
  • 1/2 cup raisins
  • 1/3 cup wheat germ
  • 2 tablespoons sesame seeds
  • 1 cup semi-sweet chocolate or carob chips
DIRECTIONS
Heat oven to 350F. Grease 13x9 pan. In large bowl combine brown sugar, peanut butter, corn syrup, margarine and vanilla; blend well. Stir in remaining ingredients. Press mixture evenly into prepared pan. Bake at 350F for 15 to 20 minutes or until light golden brown. Cool completely. Cut into bars. Makes about 24.

From a Pillsbury cook book my dh gave me before we were married. It's pretty basic--it even tells you how to make mashed potatoes. I guess he suspected how things were going to be even back then. *g*
