EGG SUPREME

Note: I appear to be on an egg roll here (my puns leave a lot to be desired!) This is another pre-nuke recipe from the 70s - was that before or after eggs were bad for us? Latest research says real eggs may be better than their chemically fixed substitutes (which will remain nameless). Of course we have to remember eggs in moderation, so this recipe should do for your monthly quota of eggs. >< ))) :> ~~~~~J - C
INGREDIENTS

Step #1

  • 2 teaspoons of sugar
  • 1 teaspoon of salt
  • 1 cup of milk (I now use skim milk, sometimes I do try for the health conscience approach)
  • 6 eggs (I have yet to try an egg substitute here, for fear of failure--also flying and 50)
Step #2
  • 1 small package cream cheese (go ahead with light or low fat version if you want, hey I can't tell the difference and cream cheese rates right up there with JAK to me!)
  • 1 small package of cottage cheese (of course low fat, no fat, whatever)
  • 1/3 stick of butter (don't you dare even think of a substitute here, I'm telling you'll believe it's not butter)
  • 1/2 lb. of muenster or monterey jack cheese (oops, no spell check for cheese names, but you know what I mean, sorry I'm spelling impaired : )).
Step # 3
  • 1 teaspoon baking powder
  • 1/2 cup of flour
DIRECTIONS

    Mix stuff from steps # 1 & 2 together (you can do this part ahead of time; I've even done it the night before a Brunch/Breakfast. But understand I only drag this out for company as the dh can take it or leave it. So why bother, I ask you?)

    Add stuff from step #3 to the mixture right before baking (Yes on occasion I can bake but usually under duress. I don't do bread that's what a bakery is for!) Pour into a 13" x 9" glass baking pan. No further grease needed this recipe has a sufficient already!)

    Bake at 350 degrees for 40 minutes.

    PS You can add other stuff, like mushrooms (canned of course, if you use fresh you have to cook them first to dry them out and here we go another pan, another procedure). I love mushroom, guess what stuff I add? Sorry no JAK book for the winner. :)
