JAMAICAN COD FISH CAKES

INGREDIENTS
  1. Fresh cod (salt) fish from a fish market (not a supermarket)
  2. Flour (white)
  3. Salt
  4. Black Pepper
  5. Scallions (diced)
  6. Cooking oil
  7. A frying pan
DIRECTIONS

  1. In a plastic or metal bowl soak the fish for approximately one hour
  2. Remove the cod fish from the bowl and skin off covering of the fish with fingers (black portion)
  3. Pluck, pull or tug cod fish apart; discard the bone(s)
  4. In the empty bowl pour warm water over the fish and drain
  5. Add, salt, flour,scallions and pepper; knead until you form a ball
  6. Make 1-2 inch balls or flatten discs of the mixture (you can taste and add salt and pepper to taste)
  7. Add cooking oil to frying pan on medium heat
  8. Fry until lightly brown
  9. Blot on paper towels
This appetizer can be complemented with a great Rum Drink!
