MY SISTER'S BANANA BREAD

Note: Well, like Rebecca, I'm a "creative" cook, but my creativity rests with my "sharing" recipes with my sister (she shares, I make/eat). I love this banana bread and so does my family. Here goes:

Preheat oven to 350%. Grease and flour 3 bread/loaf pans.

INGREDIENTS
    Mix:
  • 1 cup oil
  • 2/3 cup of water
  • 4 eggs
  • 2 cups of mashed bananas (about 3-4 bananas)

I just throw the bananas in the mixer, mash it up and then add the other things.

    Once that's done, add --

  • 3 cups of sugar
  • 2 tsp baking soda
  • 1.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
DIRECTIONS

Slowly add 3 1/3 cups of sifted flour (and yes, I do sift it but I do it easy with a small battery run sifter - works great).

Pour into the loaf pans for 50-60 minutes. Test it with a toothpick to make sure it's done. Let it cool.

EATING IT MY FAVORITE WAY:

Cut a slice of the bread, heat it in the micro for 10 secs, slather with peanut butter (at this point, you're already getting lots of sugar and fat, so what's a little more?), then eat!
